We have a new rule in our house where we each have to cook one vegetarian meal a week which is a bit new for me, being one of those people who think that it’s not a meal if it doesn’t contain meat. Anyway I’m changing my mind on that since it saves me money AND it’s healthier.

For tonight’s effort I made rostis with potato, leek, parsnip and some other bits in, and stuck a fried egg on top to make it look a bit more interesting.
